Siamese coloring is actually caused by temperature differentiation.

The color variation of the Siamese is a form of albinism.
It’s the result of a mutation in the TYR gene which produces an enzyme called tyrosinase. This enzyme is directly involved in the production of melanin and it's heat sensitive in its mutated form. While this enzyme does not react to normal body temperatures, it does develop darker in colder temperatures.
The coloring can almost be viewed as a heat map of the cat's body.
